Guest guest Posted September 27, 2006 Report Share Posted September 27, 2006 Chipotle Black Bean Dip 15 ounces black beans, rinse, drain, mash 1/2 cup sour cream 1/4 cup tomato paste 1 teaspoon chipotle chile pepper in adobo sauce 1/2 teaspoon ground cumin 2 tablespoons onion, chopped 2 tablespoons diced tomato 1 teaspoon chopped fresh cilantro Combine beans, sour cream, tomato paste, chipotle chili pepper and cumin. Refrigerate 20 minutes. Garnish top of dip with onion, tomato and cilantro. Serve with tortilla chips, and salsa or guacamole, if desired.
