Right now, I'n not vegetarian, but so far have given up most fast food, most red meat (I can't resist the occasional tri tip) and try to eat at least one vegetarina meal every day. It's a slow, gradual process. Right now, I'm looking for lunch solutions (a meal I usually eat solo). I'm looing at quick easy solutions. I tried an " Amy's " rice bowl, and didn't much care for it, although I could make a better version myself. I ask you this- If you start with a bowl of brown rice, what would you add? Please browse the recipe files and look at the hummus recipes as well as all the sandwich and wrap recipes. Actually last night we had steamed snap peas, yellow squash, carrots, and bamboo shoots, with a green curry (a bit of Thai Kitchen's Green Curry Paste added to a can of coconut milk-- that's all I add. I don't use the sugar and fish oil that is suggested on the jar of curry paste. This can have a kick to it; the amount of paste you use is according to taste. The ingredients are tahini (ground sesame), lemon, salt, garlic, and water. Different recipes call for varying proportions. I usually use 1/2 cup tahini, 1/4 cup lemon juice, 1tsp salt, and two or three pressed garlic cloves. I toss these into a bowl and stir, and then gradually add water, constantly stirring, until I get the consistency I want. And usually, I can't help but toss a pinch of cayenne pepper into it for the final stir. It takes just a few minutes to prepare and is a fantastic sauce. I would like to add some chickpeas, some onion, some green peas and then probably some tomatoes, cooked red potatoes, some garam marsala and what ever else sounds good. This is a family favorite that I make often. Stir Fry 1 Can Worthington Choplets http://tinyurl.com/hg2w4 1 Bell Peppers, sliced in big pieces 1 Onion Chopped in large pieces 1 Carrot sliced 1 Celery Rib, sliced 1 cup of fresh chopped Broccoli 1-2 minced garlic 1 TBSP Bill Best " Beaf " Seasoning 1/2 tsp ground ginger Salt to taste or use Braggs Liquid Aminos(soy sauce alternative that tastes as salty as Soy Sauce but has MUCH LESS Sodium) 4 cups of cooked Basmati Rice Drain the Can of Choplets and pat dry with a paper towel. Slice the Choplets into bite size pieces. Put into Choplet pieces into a hot frying pan with some Canola oil and brown. Add the Bill's Best " Beaf " Seasoning to it and brown minute longer. Put Choplets into a bowl for later. Add the Vegetables to the Frying pan with a bit of Canola Oil. and stir constantly over high heat until brightly colored. Add the ginger and garlic and stir until well to blend. Add the Choplets back into the frying pan with the Vegetables. Add salt to taste or Braggs lqd. Amino's(you can find this at The Bean Store and other Health Food Stores). Guest guest Posted September 14, 2006 Report Share Posted September 14, 2006 Hi Lori: I would sautee up some onions, garlic, carrots, celery, broccoli, cauliflower, bell peppers,corn, peas, anyother veggie that you feel like, and then I would add some chile powder, cumin powder, ginger, cinnamon and stir to coat the veggies, now I would add my brown rice and some tofu and mix then add some soy sauce. Or you can take a bowl of brown rice and mix in some bell peppers, onions, garlic, celery and black beans. The other day for lunch I made brown rice and lentils. And when I do walk up to the bigger supermarket, I always forget brown rice. BUT, if I can ever remember to get it, I have a few recipes I have found, and hubby and I love chinese type meals, so most likely would do fried rice and other stuff like that.
