I haven't tried it yet, but found it while looking for camping recipes for our upcoming camping trip. It is from www.campingclub.com Cheesie Summer Squash 1 med zucchini squash, cut in chunks \ 1 med yellow squash, cut in chunks \ 2 cloves garlic, chopped \ 1 small can mushrooms \ 1 15 oz. can diced tomatoes (or use 2-3 fresh tomatoes diced) \ 1 small onion, sliced \ 2 Tbsp olive oil \ 1/2 cup parmesan cheese \ 1 cup shredded mozzerella cheese \ dash or salt and pepper. Place all place first 7 ingredients and salt and pepper in thick aluminum foil (enough to form a " baking sheet " about 12 inches long.. bake on grid over low fire or good bed of coals for about 20 mins., stirring occasionally.
