Guest guest Posted September 16, 2006 Report Share Posted September 16, 2006 Butterbean Casserole or Baked Lima Beans Keys: Yield: 1 Ingredients: 4 can small Butter Beans, or small Lima Beans, 1 x Vidalia or sweet type onion, chopped small 1/2 cup chopped celery (strings removed) 1 x sweet red or green bell pepper, seeded, chopped 1 clv garlic, crushed, peeled, finely chopped (optional) 2 tbl to 1/4 cup butter or marg. ---------------- Sauce: ---------------- 1 can (8 oz) plain tomato sauce 2 x or 3 Tablespoons granulated sugar, to taste 1/2 tsp table salt, to taste 1/8 tsp black pepper 1/2 tsp paprika (optional) ----------------- Topping: ---------------- 1/2 cup grated sharp cheddar cheese 1/2 cup Ritz Crackers or Ritz Cheese Crackers, crumbled (10-12) 1/2 stk butter, melted, for drizzling on top Or, ******Spray with Butter spray*** Method: Drained and rinse beans with cold water and drained again. Reserve butter beans. Saute' onions, peppers and celery in butter over low heat until soft. Add garlic (optional), tomato sauce, paprika, sugar, salt and black pepper. Simmer for 10 minutes. Combine beans and sauce mixture in a 9x13 baking dish or pan. Bake at 350 Degrees F. for about 25 minutes. Add Topping: Top with the grated cheese. Cover with crumbled Ritz cracker crumbs.
