I make Veggie Sushi often as there are a 1/2 dozen Vegetarians who adore Sushi in my family. I use flavored Tofu cut into 1/2 inch wide sticks and/or sweetened egg omlet (Tamago) inside the Sushi as well as avocado, cucumber, shredded carrot, pickled veggies, LOTS of wasabi, sesame seeds, ponzu and soy sauces, etc. You can either buy pre seasoned extra-firm Tofu, or just buy plain extra-firm, dump the water and make a marinade of soy sauce, ginger, garlic, sesame oil.
