great eggplant appetizer

I made these up last night. I used an egg, but for vegans I think it would

work and hold together without.

 

one large eggplant

half a cup breadcrumbs

salt

pepper

one egg

half a cup or more of cheese

 

Cut the eggplant up in cubes, and boil it until tender, mash it up well with

a fork, and mix in all ingredients. Set it in the fridge for a few hours,

then form into patties. Fry in small amount of oil until browned on both

sides. I really didn't measure things, so all these measurements are

estimates. It was very good however. I think any shredded cheese would work,

vegan or otherwise.
