Question - Veg. Sushi & spring rolls Amy

Ooo kimchee would be delicious in sushi. Common Japanese pickled

veggies used in sushi and onigiri rice balls are that pretty red

pickled ginger and plums (umeboshi). I wonder if those pickled green

beans or asparagus would be good in sushi?

 

Amy, would you tell how you assemble & wrap the spring rolls? I've

been wanting to try making those.

I haven't made spring rolls, maybe I misspoke. I make California rolls, and

I roll them backwards from how you get them from the sushi market. I'm not

talented enough to put the rice on the outside. I take the seaweed, put it on

my bamboo rolling mat, put sushi rice on it (that recipe is in the files),

add slivered avacado, carrot, cucumber, whatever is going in and roll it up.

Then I wrap in cling wrap and chill for a few hours, and slice. I usually put

the pickled ginger on the side because my kids don't like it yet. I'll have to

look for the plums at my local market. I bet the beans or asparagus would be

great in rolls too.

 

One of my daughter's friend's neighbors made some awesome wraps once at a

party we were at. I should track her down and get a lesson. I think my SIL has

made spring rolls, I'll ask her about it. AmyF

I don't care for the rice on the outside -- too sticky :) I have seen

pickled plum paste in tubes, like readymade wasabi. It looks

convenient but I haven't tried it yet. I love avocado in sushi :)

I love the 'sticky rice' in the veggie sushi. You can make it less

gummy and starchy by either browning it first or if you prefer the

white color, drain the rice while cooking and replace the water.

Avocado is beautiful in veggie sushi as well as mashed olives,grated

carrots, minced green onions including the tops, and green and red

peppers. Minced cooked spinach and broccoli also works.

I like the rice, I just like it on the inside of the roll. And then

in the inside of my tummy :) Broccoli, great idea!
