Tofu-And-Watercress Pate

 

This pate is light and fresh, and very good served with wheat crackers or rye

crisp bread.

 

1 bunch watercress, rinsed, trimmed, chopped

6 ounces tofu, drained

1/4 cup ground almonds

4 green onions, trimmed, finely chopped

2 tablespoons chopped fresh parsley

1 teaspoon grated lemon peel

salt to taste

freshly ground black pepper to taste

 

Place all ingredients in a bowl and mix well with a fork. Spoon into a dish or

bowl and serve with wheat crackers or rye crisp bread. Makes 4 servings.
