Guest guest Posted March 20, 2006 Report Share Posted March 20, 2006 Asparagus When you buy asparagus chose it by seeing if one of the stalks will snap loudly. If it is rubbery don't buy it unless you are desperate. Too thin of stalk means it was picked to early and won't have as much flavor. Too thick of stalk and it will be woody and you'll have to snap off a lot of the stalk making it more expensive since it is sold by the pound. Break the stalk ends off at the point on the stalk where it gives and snaps, I don't use a knife to cut off the ends as that wastes a lot of really edible asparagus, wash, place in steamer, steam 3-5 minutes, testing at the end of 3 minutes to see if it is done to your taste. It will continue to cook even after removing from steamer, so not eating all of it right away run cold water over the asparagus until it is cool. I cut it into small pieces. I eat it with Earth Balance and salt and pepper. Sometimes I fry it after steaming it, in olive oil, a twitch of Earth Balance and salt and pepper. I like my vegetables fresh tasting which means without much other than butter, salt and pepper. My favourite way to eat it is steamed (or even briefly nuked) and drizzled with a melted butter and lemon combo and served with toasted pine nuts and shavings of parmesan - mmm, guess what I'm having for my tea tonight?! But I must ask...where are the recipes that you mentioned as your favorite with asparagus? Also, for some reason asparagus is the only spring vegetable that I can think of that we can't get here year around without spending a huge amount of money...can you name others? This isn't CA you know? Besides that, my understanding is that CA ships so much of their produce out of state that sometimes they have a harder time finding what they want and at a reasonable price. One of the large animal rights or vegan groups relocated to CA and were looking forward to getting fresher more wonderful produce. I think they moved from NY. They were very disappointed when they got there and found they actually got better produce, more variety and cheaper where they had come from. That is odd. But, CA weather, at least in some parts, is more conducive to year around gardening and you could raise your own. Of course then you have to deal with the pollution, crowds and insanity that reigns there. Not sure if this is a spring vegetable, but when I was in the supermarket this afternoon looking for asparagus I noticed that baby Romanesco cauliflowers were back in store so I had to get one. They are so beautiful with their extraodinary shape and luminous colour I could just get lost in looking at them, but they also taste really good - a much sweeter and more delicate flavour that ordinary cauliflower. Do you have them over there? Here are photos of them which I found online. I love to toss them into a stir fry about 2 minutes before it's finished. A very pretty, simple meal is just some steamed asparagus served with an omelette and some cut cantelope. Beautiful colors and the flavors compliment each other. I've been waiting to post because there's a recipe for asparagus I wanted to try first. But I decided to send a link for the recipe (untried) anyway. My friend at work made it and raves about it...but I don't have enough asparagus out of my bed to try it yet. I did make the wasabi sauce a couple of times and had it over steamed broccoli. It was good as written, but I thought it had too much soy, so the second time I made the sauce I used: 1 tsp wasabi powder, 1 tsp powdered ginger, 2 Tbsp orange juice, and maybe a tsp soy sauce. Tasted better to me--a lot hotter than the recipe's version. I think the sesame oil and pepper on the asparagus in the recipe would really be a good combination with this sauce.
