QOTW: What is your favorite Spring season veggie?

Asparagus

When you buy asparagus chose it by seeing if one of the stalks will snap

loudly. If it is rubbery don't buy it unless you are desperate. Too thin of

stalk means it was picked to early and won't have as much flavor. Too thick

of stalk and it will be woody and you'll have to snap off a lot of the stalk

making it more expensive since it is sold by the pound.

Break the stalk ends off at the point on the stalk where it gives and snaps,

I don't use a knife to cut off the ends as that wastes a lot of really

edible asparagus, wash, place in steamer, steam 3-5 minutes, testing at the

end of 3 minutes to see if it is done to your taste. It will continue to

cook even after removing from steamer, so not eating all of it right away

run cold water over the asparagus until it is cool. I cut it into small

pieces. I eat it with Earth Balance and salt and pepper. Sometimes I fry it

after steaming it, in olive oil, a twitch of Earth Balance and salt and

pepper. I like my vegetables fresh tasting which means without much other

than butter, salt and pepper. Be careful to not overcook either unless that

is how you like it.

i love asparagus and sugar snap peas.

i just cook the asparagus until they are crisp-tender,

add a little butter, fresh lemon juice, and salt and

pepper.

i don't really have a particularly interesting way to

cook sugar snap peas. i just blanch them in boiling

salted water. or use them in stir fries or in miso or

other asian-inspired noodle soups. i like them raw

too.

i would have to say that when i see fresh tender asparagus

in the stores then i know spring has sprung! Always makes

me a bit giddy!

Asparagus, asparagus... let me count the ways!

Rosemary Asparagus, Fettucine with Asparagus and

Lemon, Spring Asparagus with White Bean Sauce...

the list goes on! :)

~ pt ~

Ere frost-flower and snow-blossom faded and fell,

and the splendour of winter had passed out of sight,

The ways of the woodlands were fairer and stranger

       than dreams that fulfill us in sleep with delight;

The breath of the mouths of the winds had hardened on tree-tops

and branches that glittered and swayed

Such wonders and glories of blossom like snow

or of frost that outlightens all flowers till it fade

That the sea was not lovelier than here was the land,

nor the night than the day, nor the day than the night,

Nor the winter sublimer with storm than the spring:

such mirth had the madness and might in thee made,

March, master of winds, bright minstrel and marshal of storms

that enkindle the season they smite.

Yet another vote for asparagus, which I only discovered I liked

fairly recently and I've been making up for all those wasted years

ever since. My favourite way to eat it is steamed (or even briefly

nuked) and drizzled with a melted butter and lemon combo and served

with toasted pine nuts and shavings of parmesan - mmm, guess what

I'm having for my tea tonight?!

You must get the drift then...asparagus rocks! But I must ask...where are

the recipes that you mentioned as your favorite with asparagus? Also, for

some reason asparagus is the only spring vegetable that I can think of that

we can't get here year around without spending a huge amount of money...can

you name others? This isn't CA you know? Besides that, my understanding is

that CA ships so much of their produce out of state that sometimes they have

a harder time finding what they want and at a reasonable price. One of the

large animal rights or vegan groups relocated to CA and were looking forward

to getting fresher more wonderful produce. I think they moved from NY. They

were very disappointed when they got there and found they actually got

better produce, more variety and cheaper where they had come from. That is

odd. But, CA weather, at least in some parts, is more conducive to year

around gardening and you could raise your own. Of course then you have to

deal with the pollution, crowds and insanity that reigns there. (my apology

to those on here in CA)

I don't know if I have a favorite spring veggie... but I do like

asparagus roasted and put on top of a nice romaine salad, tossed with

avocado, mango, and a citrus-cumin vinaigrette.

Ooh, I love artichokes, too! I'm always disappointed that I feel like

I'm throwing away more than I'm eating though :)

This is a second attempt to post this so if it's a duplicate please

forgive me.

Not sure if this is a spring vegetable, but when I was in the

supermarket this afternoon looking for asparagus I noticed that baby

Romanesco cauliflowers were back in store so I had to get one. They

are so beautiful with their extraodinary shape and luminous colour I

could just get lost in looking at them, but they also taste really

good - a much sweeter and more delicate flavour that ordinary

cauliflower. Do you have them over there? Here are photos of them

which I found online.

I always see snow peas (now snap peas)but they seem very rich and

green during spring.

I love to toss them into a stir fry about 2 minutes before it's

finished.

My vote is definitely asparagus.

A very pretty, simple meal is just some steamed asparagus served with an

omelette and some cut cantelope. Beautiful colors and the flavors

compliment each other.

I've been waiting to post because there's a recipe for asparagus I wanted

to try first. But I decided to send a link for the recipe (untried)

anyway. My friend at work made it and raves about it...but I don't have

enough asparagus out of my bed to try it yet. I did make the wasabi

sauce a couple of times and had it over steamed broccoli. It was good as

written, but I thought it had too much soy, so the second time I made the

sauce I used: 1 tsp wasabi powder, 1 tsp powdered ginger, 2 Tbsp orange

juice, and maybe a tsp soy sauce. Tasted better to me--a lot hotter

than the recipe's version. I think the sesame oil and pepper on the

asparagus in the recipe would really be a good combination with this

sauce.

Here's the link:

P.S. My few little sprigs of asparagus that have come up so far are not

very phallic...LOL...we had kind of a drought here last summer and this

winter.

We used to have peas right out of the garden that were so sweet the

dogs would fight over them.

YUM!! i can't wait to have a yard so i can have a decent, non-boxed

garden.

when i was growing up, we used to have wild mint growing all over the

place. i don't know if that counts as a spring veggie, but i miss

munching on the leaves. :)
