For spring rolls... there are " fresh spring rolls " and there are fried. It is two different kinds of " papers " that are used. The fresh rolls are rice papers sold dry, you dip in water (briefly) to soften, fill with whatever, and roll up, tucking both sides in, so it is not open on the ends. The other papers (for fried ones) are in the freezer section, fill with whatever, roll up the same way, and drop in a deep fryer. YUM. I have filled the fresh ones with sushi rice (often I then steam them, gives the wrap a slightly different texture), and love it. you can fill with (cooked or raw) shredded cabbage, mushrooms, bamboo shoots, etc, whatever! Same with the fried. Any small leftover Asian style foods will work in the fried ones. Chop any large pieces. You will need less saucy fillings for the fresh ones, or it may leak through. Buy the wraps/ 'papers' in an Asian or specialty market. The ones in the freezer section (for fried, made of wheat flour) will most times have rolling directions on the back of the package. The dry (for fresh rolls, made of rice) usually do not have ANY directions. Just dampen them, and roll up like the other ones. Oh yea! The fried ones are *wonderful* filled with chunky apple sauce and fried up! or any other flavor chunky sauce. Once I used a chunky apricot applesauce, rolled 'em, fried 'em, and drizzled vegan dark chocolate over the outsides. YUMMM! Oh yeah, speaking of which, there are TWO types in the freezer section *egg roll wraps* (sometimes even sold thawed in regular markets in the produce section) but bear in mined, it has *egg* in it! and then there is the *spring roll wraps* which do not have egg. Just look at the package carefully (if you avoid egg)!! If using the frozen spring roll wraps, they dry out fast when open. so thaw them IN the package, and cover the stack with a damp towel (damp, not wet - paper, or cloth) while using them; pulling out one at a time. If using the dry rice ones, dampen one at a time; either in a shallow dish, or under slowly running water. Sorry to have gone on for so long!! Can ya tell I have great fun with these things?? I *love* spring rolls, and my freezer is FULL of a variety of rolled ones ready to pop in the fryer whenever a want one quick! Have fun playing and experimenting.
