(Lewisville/Irving) I also live in a mixed household, although my husband has become vegetarian in the past year (he read " Fast Food Nation " last winter and hasn't wanted meat since). My kids are all 18+, and only one lives with me currently (until 4/30/06) - THEY all eat meat. Here's how I've handled it: When hubby was still eating meat, I'd prepare vegetarian dinners and give him the option of having me prepare one piece of meat for him. I treated it like a side dish in his case. As for the kids, two of the three love to cook, and they cook/buy their own meat now, knowing that I am opposed to even buying the stuff. In earlier years, I'd usually have them put it into the pan for me (especially ground meat) and then I'd season it and cook it for them. Now they respect the fact that my husband and I don't like the smell, so they try only to cook it when I'm not home and well ventilate the place until I get back:) One thing I love to do is make tacos for the whole family. So, I'll let the meat eaters have their spicy beef or ground turkey meat (which I always mix with black beans on their part or sometimes my youngest wants chile lime mahi mahi - no beans), and I just make us a pot of vegetarian black beans for mine and hubby's. We have all the sides as usual, fried tortillas, and sometimes special salsas like pineapple mango:) The whole family eats together, and no one is " threatened " by what's available on the table. Now hubby and I are beginning to explore raw vegan fooding:) I think we're going to go 100% after we move next month:) It's a whole new and different world out there!
