Guest guest Posted January 15, 2006 Report Share Posted January 15, 2006 I have been going through the cook books on how long to steam the different greens and omgoddess, they cook them so long! Especially kale. I do three minutes and love it. The store cuts the stems up to the bottom of the leaves and so I just chop it all together and steam it. They are tender, toothy, but tender and delicious. I like the stems and figure they probably have lots of fiber in them. The idea of using them in a salad sounds like something to try, but I think I would just blanch them first. But as I said I think I may only like the lacinato kale (I got to name it finally) and that might be too tough raw. I had no greens around today for a salad so I used fresh cilantro...I love cilantro and put in as much as I would have any other green. I loved it. Had cilantro, tomatoes, avocado, sunflower seeds, and those hard Chinese noodle thingies with spicy Thai dressing. Yummers. But I know absolutely nothing about chard. linda - cronzen Kale rocks! I particularly like it chopped raw in place of lettuce in a salad. Some of my favorite combinations: kale, apples, soy nuts (or walnuts), yogurt kale, tomatoes, balsamic vinegar, onions, garlic, carrots For all the talk of kale being tough, I actually find chard to be tougher. But maybe that's just because I'm relatively new to the latter and still haven't gotten the breakoff point for the stems right? Or do I need to cook the stems longer? But I know absolutely nothing about chard. linda " linda, Cilantro salad is so good! I tried chard tonight for the first time and it was very good raw and super delicious cooked.
