what kind of broth works best with this recipe? (and how is shiitake water

made?).. thnx!!

I use Telma brand broth cubes. They are usually in the kosher

section. They have potato starch in them so I don't know if other

broths would come out thinner? It's easy to add extra flour if so.

 

Whenever I soak dried shiitake mushrooms I save the water in the

freezer for broths & things. It tastes nice. Just take dried

shiitake mushrooms and soak them until soft in some warm water. Use

the mushrooms in whatever recipe and save the water in the fridge or

freezer.
