I found an amazingly good Vegan ( I am vegan ) Banana bread that is low fat~~~ I LOVE THIS STUFF! Here is my altered version of the recipe which I made the other day. There are NO eggs in this and it rises so beautifully you would never know. Banana Bread- VEGAN 2 tsp cinnamon 6 ripe bananas 2 heaping tbs honey OR 1 TBS Honey and 1 TBS Agave Syrup 1 tsp vanilla 2 cups WHOLE WHEAT 1 tsp baking powder 1 tsp baking soda 3 tbs coconut oil - handful of chopped walnuts (optional) To me it's a must have....LOL!!! pure chocolate chips (optional) Raisins ( Optional ) 1. mash bananas till smooth , add cinnamon & Vanilla 2. Melt coconut oil & honey ( this is important as coconut oil is solid at room temp and won't mix as well if not melted ) 3. Add melted mixture to banana mixture 4. sift dry ingredients and add to banana mix 5. pour in greased pan (spray with non-stick spray) DO NOT OVERMIX! that is how baking gets hard and heavy. it is ok if it's a bit lumpy when you put it in the pan. I used a loaf pan and non stick spray. Bake for ~45 min at 350 let cool in pan before removing. ENJOY!! Quote Link to comment Share on other sites More sharing options...
