Guest guest Posted April 24, 2006 Report Share Posted April 24, 2006 This is a delicious salad to take to a potluck or BBQ. i got this recipe out of a cookbook called Savor the Flavor of Oregon and adjusted it a bit to fit my taste. Parsley Tortellini Toss 1 package (16oz) frozen cheese tortellini 1 1/2 cups cubed provolone cheese 1 1/2 cups cubed mozzarella cheese 2 cups broccoli & cauliflower frozen medley, thawed 1 cup frozen peas, thawed 2 medium carrots, shredded 1/2 medium sweet red pepper, diced 1/2 medium green pepper, diced 1 cup minced fresh parsley 1/2 cup olive oil 3 Tbs red wine vinegar 2 Tbs grated Parmesan cheese 3 garlic cloves, minced Cook tortellini according to package directions; rinse in cold water and drain. Add the next 7 ingredients with the tortellini into a large bowl. In a jar with a tight-fitting lid shake together the rest of the ingredients. Pour over the tortellini and vegetables and toss to coat. Cover and chill until serving.
