Figured I had better make time and share a recipe. This is one of my favorites of the Autumn season. Give it a try and I bet it will be one you love too. Chocolate Chip Pumpkin Bread 1/2 cup butter or margarine, softened 1 cup + 2 Tbs. sugar 2 eggs 1 cup prepared mashed pumpkin 1/4 cup soy milk [or whatever milk] 1 tsp vanilla extract 1 1/2 cups all-purpose flour 1/2 cup whole wheat flour 1/4 cup baking cocoa 1 tsp. ground cinnamon 1 tsp baking soda 1 tsp salt 1 cup chocolate chips In a mixing bowl cream the butter with the sugar. Add the pumpkin, eggs, soy milk, and vanilla; blend well. In another bowl, sift together the flours with the cocoa, baking soda and salt. Combine with the pumpkin mixture until well blended and smooth, then fold in the chocolate chips. Transfer to a greased 9x5x3 inch loaf pan and bake at 350 degrees for 60 to 65 minutes, or until a toothpick inserted in center comes out clean. Cool for 10 minutes before removing from the pan to cool on a wire rack. Yield: 1 loaf ~ PT ~ " Keep your life simple because the more you get, the more complicated it becomes.
