Guest guest Posted August 14, 2006 Report Share Posted August 14, 2006 This is just one of those recipes I found once in a country cooking magazine and converted to a vegetarian dish by subbing out the meat. It makes a yummy comfort food dish. Country-Style Casserole 1 can (10.75oz) condensed cream of mushroom soup, undiluted 1/4 cup mayonnaise 1/4 cup milk 1 Tbs Dijon mustard 2 cups Quorn brand tenders, or other meat substitute 1/2 of a 26 oz bag frozen shredded hash brown potatoes 1 cup shredded carrots In a large bowl, combine the first five ingredients. Stir in the tenders, hash browns and carrots. Transfer to a greased 9x9 baking pan. Cover and bake at 350 for 45 minutes. Uncover; bake additional 15 minutes or until bubbly.
