I made one of the great chili recipes from the folders on file. It was amazing! ORRR how about Ratatouille? Not an exact recipe but here's what I do: 1/4 cup olive oil 1 LARGE eggplant- peel and cube about 6 zuchinni - sliced 4 red peppers- chopped or sliced 3 onions - sliced 1 large 28oz can of crushed tomatoes a few cloves of garlic Italian spices to taste Place all vegies and oil in pot Add crushed tomatoes and spices Simmer until all tender- about an hour or so.
