Guest guest Posted August 29, 2006 Report Share Posted August 29, 2006 Here's an oldie but a goodie - I added and subtracted certain things to make it my own. I am bringing this to my mothers BBQ this weekend. I don't measure it's really all in how much you want to make...for the Salsa though I did use the following: Salsa: 4 Large Ripe tomatoes 3 Small Cloves garlic 1 Medium Vidalia Onion 3 Small Jalepeno peppers 1 Medium Orange pepper 1 Medium Red pepper 1 Small bunch of fresh cilantro Fresh juice of 1 lime If you have a food processor you can throw everything in there and chop it all up finely. I do not have one so I sliced everything small by hand, except the garlic, jalepenos and the cilantro ..that I pureed. Then I added the lime juice...salt and pepper to taste and mixed by hand with a wooden spoon. (Make sure you remove the seeds from the Jalepenos peppers unless you want to cry and die from the heat LOL). The salsa came out really good and very fresh... Hummus: 1 can of Chickpeas - drained and rinsed 2 Tablespoons of jarred chopped garlic Fresh juice from 1 lime (or lemon, I used the lime and it tasted just fine) 1 Tablespoon water Salt and pepper to taste Blend all ingredients well in food processor or with a hand mixer..add more water or juice till the consistancy is the way you want it. Server both chilled with your favorite chips, pitas or crackers! Enjoy! Typically I use less garlic (about half that) than you suggest....I may have to try upping it to see what I think!! I do add about two (or slightly more) tablespoons of Tahini, and usually several chunks of roasted red peppers (right out of the jar, use the ones in oil and water, *not* the ones in vinegar!). And I have never added pepper..... hmmm. I have a friend who always adds oil (typically olive). I have tried it with olive oil, and with sesame oil and prefer the sesame over the two, but like it better without the oil at all. I also see you mention to serve chilled...have you tried it fresh out of the processor?? It is *awesome* warm!! (the whirring in the processor gives it a slightly warm temperature). YUM!
