Guest guest Posted August 13, 2006 Report Share Posted August 13, 2006 Ganny's Unpeeled Apple Cake Cake: 2 cups all-purpose flour 1 1/2 teaspoons baking soda 2 teaspoons ground cinnamon 2 large eggs, well beaten 4 cups unpeeled, diced tart apples, such as Granny Smith (1/2-inch dice) 2 cups sugar 1/2 cup oil 2 teaspoons pure vanilla extract 1/2 cup raisins, optional 1/2 cup chopped pecans, optional Icing: 1/2 cup unsalted butter 1/4 cup sugar 1/3 cup milk 1/4 teaspoon pure vanilla extract Position a rack in the lower third of the oven and preheat to 350 F. Heavily butter and flour a 9 x 13-inch baking pan and set aside. In a small bowl whisk together the flour, baking soda and cinnamon. Set aside. In another larger bowl, mix the eggs with the apples, sugar, oil and vanilla. Stir in the raisins and nuts, if using. Transfer the batter to the prepared pan. Bake until the cake is set and a toothpick inserted into the center of the cake comes out clean, about 50 to 60 minutes. Remove cake from the oven and set pan on a wire rack. Make the icing by placing the butter, sugar and milk in a small pan. Bring the mixture to a boil over medium high heat and cook for 3 minutes, stirring constantly.
