Guest guest Posted March 21, 2006 Report Share Posted March 21, 2006 Roasted Asparagus 1 bunch thin asparagus (about 1 1/2 pounds) 1 1/2 tsp. olive oil 3 garlic cloves, finely chopped 1/4 tsp. coarse sea salt Preheat oven to 500ûF. Lightly coat baking sheet with non-stick spray. Bend the asparagus until it snaps and discard the woody ends, if necessary. Arrange the stalks in a single layer on the prepared baking sheet. In a small dish, combine the oil and the garlic. Drizzle over the asparagus. Sprinkle with the salt. Roast for 5 minutes. Shake the pan to redistribute the oil. Roast for 3 to 5 minutes longer, or until tender. Yield: 4 servings Per serving: 55 calories, 4 g. protein, 8 g. carbohydrates, 2 g. fat, 0.5 g. saturated fat, 0 mg. cholesterol, 137 mg. sodium, 4 g. fiber.
