I don't care for it frozen, it sure isn't the same.

I use a heavy sharp knife and if you are uncomfortable doing that, stick them

in the microwave for one or two minutes and this should soften the skin a bit

and won't be as hard to peel.

does anyone have a surefire way to easily peel yucca root? I am

majorly craving what I nicknamed " fried yucca balls " (oh how original)

but the frozen, peeled yucca just isn't as good as the fresh. The

problem, it's hard as heck to peel the waxy outside off the fresh

stuff. Anyone?

this is the original recipe:

We use yellow rice instead of ground meat.

I have used white potatoes in place of the yucca and they are similar

but not the same.

My husband just spent way too much money on a cutco knife, the big

santuko knife. I wonder if that would do it...and if I won't cut a

finger off, LOL. Thanks for the microwave trick, I'm going to try

that. I also have to figure out how to use the deep frier...hmmm. I

suppose I should hope the stores here have yucca, it doesnt seem to be

as prevalent where I live now as it was back in Florida.

Hubby normally makes this but he's out-of-town visiting family and

" working " . I sent him a text this morning and told him he's not

allowed to leave anymore, I need him here to make my fried yucca balls

:D
