Guest guest Posted September 26, 2006 Report Share Posted September 26, 2006 Stewed Apricots and Pears 1 1/2 cups water 2 cups dried apricots 3 Anjou or Bosc pears, peeled, cored and cut into eighths 1 tbsp. plus 1 tsp. sugar 2 cups lowfat vanilla yogurt Bring water and apricots to a boil in a heavy saucepan. Reduce heat and simmer 15 minutes. Add pears and simmer another 20 minutes or until fruit is softened. Add more water if necessary. Stir in sugar to taste. Serve warm with yogurt. Makes 4 servings.
