Thank you Picnic Boule Get a boule (round loaf) of bread you like (I usually get whole wheat or sourdough, depending what's available if I haven't had time to make one). Cut it in half. Rip out some of the insides, but make sure not to pull a hole through to the crust. Save those bits for something else. Spread goat cheese or cream cheese on the bread halves (helps seal so it doesn't get soggy from the veggies). Spread your choice of tapenade (olive paste) or pesto. Top with grilled/roasted veggies - tomato, red bell pepper, summer squashes, asparagus. Close up the sandwich. Cut it into wedges, keeping it together, and wrap tightly in foil. If you can't find tapenade in the store, you can make it as you like. Pretty much finely ground/blended olives (green or black, whatever you like; make slightly chunky or smooth as you like also). Often the black will come with sherry, shallots etc. blended in, but it's awesome even with just good olives. I used to find one in a store that was green olives, almonds, pimentos, and a dash of cayenne, I think capers too, but I never see that anymore. It was slightly chunky, and oh so good.
