I have been searching my recipes. Here are some vegetarian ones.

 

Barley with Black Beans

 

Prep: 35 minutes.

 

1 cup pearl barley, rinsed

15 1/2-ounce can black beans, drained and rinsed

12-ounce jar roasted red pepper, drained and sliced

1/2 cup balsamic vinaigrette

2 tablespoons chopped fresh dill, or to taste

 

Bring 3 cups of water to a boil in a large saucepan. Reduce heat to low, and

stir in the barley. Cover, and cook 30 minutes, or until water is absorbed.

If grains are too chewy, add 1/2 cup water, and cook until absorbed.

 

Combine all ingredients in a medium bowl. Season with salt and pepper.

 

Makes 6 servings.
