Guest guest Posted September 26, 2006 Report Share Posted September 26, 2006 Crockpot White Bean Stew I have this in te pot for dinner, it smells great. 1 1/2 cups dry navy beans water 2 large garlic cloves, minced 1 large yellow onion, chopped 1 large celery stalk, sliced thin 2 large carrots, sliced 1/4 cup chopped parsley 8 ounce can tomato sauce 1 teaspoon dried thyme leaves 1 teaspoon salt, optional 1/2 teaspoon ground black pepper Rinse beans with cold running water and discard any stones, or shriveled beans. In large saucepot, combine beans and 6 cups water; bring to boil. Cook 3 minutes. Remove from heat; cover and let beans stand 1 hour. Drain and rinse beans. To slow cooker, add soaked beans, remaining ingredients and 6 cups water; stir to combine. Cook on low setting until tender, about 12 hours, or follow manufacturers' directions. Makes 6 servings.
