I just watched Giada on food network....she made a frittata....then she grilled some crunchy bread, then buttered it; then sliced the frittata into small squares and served it with the bread as a sandwich. you could do this, spread goat cheese or some other cheese on the bread before putting the frittata on it; or you could put cheese into it and put on a panini grill and serve it as easier finger food sandwich that's 'glued' together with the melted cheese.
