Be warned- lots of fat! 1 can Rosarita vegetarian refried beans (other brands are okay, but these are by far the best), warmed 1 package prepared Lipton Spanish rice 2 tomatoes, chopped about 1/4 med. onion, chopped 4-5 mushrooms, chopped as well however much grated cheese you want 4 tortillas Sautee onions and mushrooms with a little olive oil till they're brown. Put it all in a tortilla, wrap it up, and eat it. Makes four servings for us, but we're pigs. Could possibly serve 6-8. Very good with cornbread.
