Sauteed Spinach with Garlic, Raisins, and Pine Nuts

2 tablespoons extra-virgin olive oil

1/4 cup pine nuts

1/4 cup golden raisins

2 large garlic cloves, sliced

8 ounces (10 cups) baby spinach leaves

3 tablespoons sliced, pitted kalamata olives

1 tablespoon fresh lemon juice

1 teaspoon finely grated fresh lemon zest

Heat 1 tablespoon oil in a large nonstick skillet over moderate heat until hot

but not smoking. Add pine nuts and toast, stirring, until golden, about 2

minutes. Transfer with a slotted spoon to a serving bowl. Add 1/2 tablespoon oil

to skillet with half of raisins and half of garlic; cook, stirring 30 seconds.

Add half of spinach and cook, stirring constantly, until spinach just begins to

wilt, about 30 seconds. Transfer to serving bowl. Repeat with remaining oil,

raisins, garlic, and spinach; add to serving bowl and toss together with olives,

juice, and zest. Salt and pepper to taste. Makes 2 servings.
