Guest guest Posted September 18, 2006 Report Share Posted September 18, 2006 Rotkraut 1 large cabbage, coarsely chopped 2 tablespoons butter 1 tablespoon sugar 1 large onion, chopped fine 2 large Granny Smith apples, peeled, chopped 1/4 cup red wine vinegar 1/2 cup vegetable broth 1/2 teaspoon salt 2 large bay leaves 8 cloves 1 cup dry red wine In a large heavy skillet, melt the butter over medium high heat. Sprinkle in the sugar and stir until dissolved. Add the onion and apples. Stir fry for 5 minutes. Add the cabbage and fry for 5 more minutes. Add red wine vinegar, broth, salt, bay leaves, and cloves. Let the mixture simmer, covered, for 25 minutes. Discard bay leaves and cloves. Serve. serves 4.
