I have eaten them mashed with butter, salt, and pepper, but never thought of

making them fried in a skillet. I will definitely try that.

Parsnips, this is how I eat them

 

 

Parsnips mashed with a little butter and pepper and salt, and then dipped

into flour and formed into small, round cakes, are nice if fried

in a skillet with a little olive oil.
