Guest guest Posted August 17, 2006 Report Share Posted August 17, 2006 Peanut Butter Carob Chip Mousse Pie Crust 2 1/2 cups granola or graham crackers 1/2 cup ghee 2 Tbsp. organic sugar or Sucanat Bottom 1 1/3 cup carob chips 2/3 cup cream 1 tsp. vanilla Topping 1 3/4 cup cream 6 oz.creamy peanut butter 6 Tbsp. honey 1 tsp. vanilla Directions: For crust, mix all ingredients in food processor. Put in oiled pie pan and shape to sides. Bake at 350F for 15 min. While crust is baking, put all bottom ingredients in pan and stir at medium low heat until ingredients are mixed together. Pour in bottom of pie crust and freezefor 1/2 hour. For topping, mix 3/4 cup cream with rest of ingredients in pan and stir over medium low heat untilwell mixed. Beat the remaining cup of cream. When mixture is luke warm, slowly add in whipped cream. Add topping to the pie crust and chill for 2 hours before serving. You may serve with chopped peanuts and drizzle melted carob chips on top.
