Vegetarian/Vegan friendly Apx.2 cups button /new potatoes-unpeeled 1 cup pearl onions -peeled 1 cup fresh or frozen peas 1 cup soy milk 1 cup veggie broth 3 tablespoons flour 2 tablespoons olive oil. salt and pepper to taste optional: chopped chives or parsley for garnish Place washed unpeeled new-baby potatoes,peeled pearl onions and peas in a baking dish and oven bake at 350 degrees until tender. Apx. 1 hr. Veggies can also be boiled. Sauce is a regular white sauce. Heat olive oil in med. size frying pan, add flour and allow to bubble but not brown. Slowly whisk in veggie broth and soy milk and simmer until desired thickness.
