Guest guest Posted September 19, 2006 Report Share Posted September 19, 2006 here is the one I use Roasted Baby Potatoes and Onions and Wilted Greens 1 lb. red/white baby potatoes 1 med. red onion, halved lengthwise and cut lengthwise into 1û2 " slices 1 Tbsp. olive oil 1/4 lb. spinach, kale, or arugula, coarse stems discarded, leaves washed & spun dry, approx. 3 cups; or pre-packaged product. 2 tsp. cider vinegar, or to taste Preheat oven to 450 degrees. Cut potatoes in half and parboil 15-20 mins. In a shallow pan toss potatoes and onion slices with oil. Season with salt and pepper. Roast potatoes and onions in middle oven, stirring occasionally until lightly browned and tender, about 15 minutes. Transfer hot potatoes and onions to a bowl. Add spinach,arugula or kale, vinegar, and salt and pepper to taste, tossing until greens are wilted. Guest guest Posted September 19, 2006 Report Share Posted September 19, 2006 If by button potatoes, you mean small marble size red potatoes( we call them creamers), I have a couple of ideas of what we do with those. Boil them whole(do not peel) with some Pole Beans or green beans and shredded carrots. Add some Smart Balance, salt and Ms. Dash while cooking. Cook until tender. Here is another idea. Boil them whole, unpeeled until tender in slightly salted water. Drain completely and saute until crispy in a little oil in a hot frying pan. I sprinkle in some fresh rosemary and kosher salt crystals. We just love both of these recipes. Sauté garlic in olive oil for a minute or two, then add rosemary and sauté another minute. Toss drained potatoes in garlic mixture. Season with salt and pepper and serve. Making up a veggie packet in foil....what ever veggies you like, (I like green pole beans, mushrooms, vidalia onions and small potatoes. Add Mrs dash, and an ice cube, close the foil packet and put on grill. You can pretty well tell when it is done by the aroma. Don't need anything on them, just nekkid & grilled.
