Hi PT,

 

You can occasionally find them at Safeway and Rays in

Oregon. They're truly yummy! More like summer squash, zucchini or

yellow squash, I'd say. I have an awesome rice recipe from an old

" Sunset " magazine that I'll post when I get time.

Okay, i know i should be able to find one here. i am only

45 minutes from the California border after all! *lol*

Now i just have to find a picture so i know what to look

for. Thank the goddess for the world wide web! ;)

i love summer squash and zucchini so i am certain

i will love the chayote.

SUNSET magazines have great recipes! i look forward

to seeing the one you've tried when you get a chance. :)
