[recipe] Imam Bayildi ~ vegan

This is so delicious and so simple to prepare. The name of

this recipe means " The Imam [holyman] fainted " , because

when he was served this dish he did faint because it was so

good. *lol* i just had to see for myself! While i didn't faint,

i was very pleased with the results. The dish is easy to prepare

ahead of time for taking to potlucks or picnics as it needs to be

served chilled; no worries about keeping it warm.

 

Imam Bayildi

 

2 medium eggplants, halved lengthwise

salt

1/4 cup olive oil

2 large onions, sliced thinly

2 garlic cloves, minced [i used more! probably double]

1 green bell pepper, seeded and sliced

1 can (14 oz.) tomatoes, chopped

3 Tbs. sugar

1 tsp. ground coriander

Fresh ground black pepper

2 Tbs. chopped fresh parsley

 

1. Gently fry eggplants, cut side down, in the oil for 5 minutes,

then drain and place in a shallow ovenproof dish.

2. In the same pan gently fry onions, garlic and green pepper,

adding extra oil if needed. Cook about 10 minutes until veggies

are very soft.

3. Add tomatoes, sugar, coriander and pepper, and cook for

about 5 minutes until mixture is reduced. Stir in parsley.

4. Spoon this mixture evenly on top of each eggplant half.

Preheat oven to 375ûF, cover and bake for 30 minutes.

When cooked, cool, then chill. Serve cold with a crusty bread.

 

Yield: 4 servings [easily doubles and is a great make-ahead

picnic/potluck recipe!]
