Fiddleheads with Lemon Butter

 

1 lb. fiddleheads

2 tbsps. melted butter

juice of 1 lemon

salt and pepper to taste

 

Wash the fiddleheads carefully so as not to break them. Place the

washed fiddleheads in boiling water, boil for 5 to 6 minutes or until

tender. (Don't overcook!) Drain well, place in a serving dish. In

a small saucepan (or in the microwave), melt the butter. Squeeze

the juice of 1 lemon into the butter and stir to combine. Pour the

lemon butter over the fiddleheads and toss lightly to coat. Salt

and pepper to taste, serve immediately.

Makes 6 servings.

They really are very good, unfortunately you will only see them (if

at all) in the stores for about a week. I steam them and just dress

them with butter, S & P, maybe lemon juice if I have lemons. I used

to work in a produce store when I was a teen, so I was exposed

to " unusual " stuff. It was pretty cool actually.
