Bean and Cuke Sandwich

This is one of my favorite sandwiches so I thought I would share the

idea with all of you just in case you have not thought of it.

 

2 tablespoons of refried vegetarian beans seasoned with your favorite

spices and herbs. I use basil,sage,onion and garlic powder. Diced

chili's are also very good . Bean mixture is best if made ahead and

refrigerated to allow flavors to blend'

 

optional : Salt and pepper

 

3-4 pieces of cucumber thinly sliced lengthwise

Vegenaise

lettuce

 

Spread refried bean mixture on favorite whole grain fresh/toasted

bread

Cover bean mixture with Veganaise to taste

Add thinly sliced cucumber

and a few lettuce leaves

 

Store the unused bean micture in a glass container in the fridge.It

also makes a great filling for wraps, tortillas, or as a dip.
