Serving size: Serves 10 or more Cooking time: Less than 60 minutes INGREDIENTS 3 eggs 1 cup pecan nuts 1 tablespoon soy sauce 1 x 250g tub cottage cheese Salt and pepper to taste ½ onion, finely chopped 1 clove garlic, crushed 1 tablespoon chopped fresh parsley 1 tablespoon chopped fresh coriander 1 tablespoon chopped fresh chives 1 cup rolled oats ¾ cup packaged dried breadcrumbs 5 sheets ready-rolled puff pastry Extra 1 egg, lightly beaten Tomato sauce to serve Fresh herbs to garnish METHOD 1. Process eggs, nuts, sauce, cheese, salt and pepper until smooth. Transfer mixture to a large bowl; stir in onion, garlic, herbs, oats and breadcrumbs. 2. Cut each pastry sheet into quarters. Cut each quarter in half. Place one tablespoon of mixture over one half of each rectangle; fold pastry over to enclose filling, pressing edges together with a fork to seal. Place pastries onto greased oven trays; prick tops with a fork, brush with extra egg. 3. Cook in a hot oven, 200C, for about 20 minutes or until lightly browned. 4.
