Guest guest Posted September 9, 2006 Report Share Posted September 9, 2006 My eldest is now in 8th grade and that means tons of fund raising (like bake sales) to raise money for the end of year class trip, yearbook, and other projects. I would like to convert some of our many quick bread recipes to muffins (many parents complain that there needs to be healthier options than all the brownies and rice krispie treats at the bake sale table). Is there some rule about a quick bread versus a muffin? Does the baking powder/baking soda amounts differ? Also, I see lots of muffin and cookie recipes in our files! Lots! Anyone care to recommend any in particular? Or other bake sale winners? I went right to the Bake Sale Oatmeal Cookie recipe and plan to try that! Thanks!
