and shred potatoes into large bowl. Add corn, onion, bell pepper and

chopped thyme to drippings in pan; cook until onion is tender.

Combine potatoes, corn mixture, green onions, peanuts, salt and egg;

stir with a fork until well mixed.

Coat non-stick griddle or large skillet with cooking spray. Spoon about

1/3 cup potato mixture onto hot griddle or skillet; flatten slightly

with spatula. Cook 5 minutes or until golden brown on each side.

Garnish with thyme, if desired. Serves 8.

Just chiming in, but you'd probably have to use whatever made

drippings since the recipe calls for the bacon drippings. I dont

think mock bacon makes drippings, does it?? I doubt baco bits

would....HMMMMMM......maybe raw mock sausage would work instead, they

kind of make drippings.

 

Of course you could just use oil instead of the drippings and put the

mock stuff in for the flavor...close..kinda.

 

Bacon is the one thing I miss. If I can fight the bacon urge I can

fight anything. It's easy for me to stay away from everything else,

it's gross, LOL!!!

It doesn't say that the pan drippings come from the bacon. I don't think one

slice of bacon would make a lot of drippings anyway, so probably peanut or olive

oil would do just as well. There is no mention of when the bacon substitute

goes in, but I'm guessing it's added when the corn, onion and pepper are. Does

that seem right? These sound delicious!
