Guest guest Posted August 17, 2006 Report Share Posted August 17, 2006 I have not tested this recipe and if any group member has tried making Gluten(Seitan) please post additional information 2 cups gluten flour 1 teaspoon garlic powder 1 teaspoon ground ginger 1 1/4 cups vegetable stock 3 tablespoons Tamari, Braggs liquid amino, or soy sauce 1-3 teaspoons toasted sesame oil(optional) Add garlic powder and ginger to flour and stir well. Mix liquids and add to flour mixture all at once. Mix vigorously with a fork. When mixture forms a stiff dough, knead 10-15 times..Let dough rest 2-5 minutes.Knead a few more times and let rest 15 minutes. Cut gluten into 6-8 pieces and stretch each piece into a thin 'cutlet'. Add cutlets one at a time into boiling broth or water. Reduce heat, cover and simmer for 30-60 minutes(recipe does not describe how to tell when cutlets are done and why the time difference unless one adjusts the time to one's altitude) Use immediately, cool and refrigerate or freeze I Quote Link to comment Share on other sites More sharing options...
