Guest guest Posted August 7, 2006 Report Share Posted August 7, 2006 I'm taking this from a great book titled " Food for Little Fingers " . As I make the recipes, I'll post more. The recipes are small, since they are made for little kids...you don't have to buy a bunch of stuff and find out your kid/you don't like it. Little Miss Muffin 1 sm egg (I used ½ a banana) 1 Tbsp veg oil 3/4 c unsweetened applesauce ½ c raisins 1 c ww flour 1 tsp baking powder ½ tsp baking soda ¼ tsp nutmeg ¼ tsp cinnamon Preheat oven 375° In a blender or food processor place egg, veg oil, applesauce, and raisins. Process until raisins are chopped. In a meduim bowl combine dry ingredients. Add applesauce mixture, stir until blended. Evenly distribute into 6-cup muffin tin (bottoms greased). Bake 20-25 mins or until firm and brown (mine took about 15 mins, so keep an eye on them). MAY BE FROZEN Quote Link to comment Share on other sites More sharing options...
