Guest guest Posted August 7, 2006 Report Share Posted August 7, 2006 Hi Deanna, Celery root/celeriac (knolselderij in Dutch) is extremely popular in Holland and one of the favourite ways of serving it is as a simple but quite delicious salad. It really is worth the trouble of struggling with a vegetable which is notoriously reluctant to co-operate with your efforts to peel it. (LOL) Celeriac Salad Serves 4 400 g celeriac (peeled) 250 ml mayonnaise 2 teaspoons mustard (mild or hot, as you prefer) Fresh parsley (chopped) Cut the celeriac into matchsticks or grate on the coarsest grater. The celeriac will discolour very quickly so as soon as you have cut/grated it, put it as you go into a bowl of water with a tablespoon of either lemon juice or vinegar. Don't wait until you have finished cutting/grating to put the celeriac into the acidulated water, or the portion you have done first will already have started to go brown by the time you finish. Bring a saucepan of plain water (no vinegar/lemon juice) to the boil. Strain the celeriac and add to the saucepan of boiling water. Allow water to return to the boil then pour celeriac into a large sieve. Rinse celeriac with cold water and dry well on a clean tea towel. Mix the mustard well with the mayonnaise and stir the celeriac into the mayonnaise/mustard mixture. Garnish with chopped parsley. Serve cold.
