Guest guest Posted February 14, 2006 Report Share Posted February 14, 2006 These are delicious. You can use canned peaches just as easily, but when fresh are in season this is the best. Peachy Champagne 4 medium size ripe peaches 1/4 cup sugar 2 Tbs. lemon juice 3/4 cup water 1 bottle inexpensive dry champagne Peel, halve and coarsely chop peaches. Place fruit in a blender with sugar, lemon juice and water. Blend until puréed. Cover and let refrigerate for up to 3 hours. To make drinks, pour about 1/4 cup peach purée into glass; slowly add champagne to top of glass. Stir to blend. Garnish as desired. Yield: 10 to 12 servings ~ pt ~ The old Lakota was wise.
