Guest guest Posted August 13, 2006 Report Share Posted August 13, 2006 Chayote Stew 2 chayotes, peeled and chopped into cubes 1 large chopped onion 4 large tomatoes peeled and chopped 1 tablespoon finely chopped parsley 1/4 cup olive oil 1/2 cup water salt and pepper Heat oil in a saucepan. Add onion, cook until golden then add the tomatoes, seasonings, herbs and water and cook for about 5 minutes more. Add the chopped chayotes and cook slowly for about 30 minutes.
