Guest guest Posted September 27, 2006 Report Share Posted September 27, 2006 PARSLEY POTATOES Yield: 4 servings - 8 very small new potatoes (about 1 pound) - 1 tablespoon whipped butter - 1/4 cup chopped fresh parsley - Salt and pepper to taste Pare a ring of skin from center of each potato. Place on a steamer rack over boiling water, cover and steam 15 to 20 minutes, until potatoes are tender. Drain. Place butter and parsley in a serving bowl; add potatoes. Season with salt and pepper, toss and serve.
