Portuguese feast! (and vegan recipe)

Dinner tonight was delicious (and all vegan)! I made the Portuguese

Soyrizo & Kale soup from the files, Portuguese Chickpea Salad with

Roasted Garlic (found online), and Broa (Portuguese corn bread - my

uncle's recipe.)

 

I did alot of reading about Portuguese food this week and discovered

that Soyrizo (the vegan version of chorizo) is quite a bit different

than the Portuguese sausage chourico. Soyrizo is made like Mexican

chorizo which is flavored with vinegar, chili powder, garlic, onion,

etc. Chourico is made with paprika, garlic, hot fresh chilies, salt.

I am going to attempt a seitan version to use with this soup in

future.

 

I, dh, and my son really loved the soup and decided it tasted alot

like chili (because of the addition of soyrizo), which leads me to

think chili made with greens (kale, etc.) would be really good!

 

The chickpea salad was something I found online, very simple and I

LOVED it. Canned chickpeas mixed with roasted garlic, wine vinegar,

fresh basil, parsley, fresh tomatoes and paprika.

 

And the bread was a huge hit! I did a web search for Portuguese

bread and found the recipe for Broa. Turns out it was my uncle's

recipe from one of his cookbooks I don't yet own! :) Recipe for the

bread will follow, so you can make it if you try the soup recipe

from the files.

 

Thanks to you all recommending kale I have now found a new favorite

veggie! I would never have tried it. It looked weird and smelled

weird. But when cooked it changes to a beautiful color and wonderful

sweet flavor! Yum! You guys are the best :)

Portuguese Broa - for the bread machine

(my comments in parentheses)

 

1 1/2 tsp Active dry yeast

2 c bread flour

1 1/2 tsp salt

1 1/2 c yellow corn meal

1 tbsp sugar (I used maple syrup)

1 tbsp olive oil

9 oz warm water + 2 tbsp

 

Add all ingredients to your bread machine according to

manufacturer's instructions. (I just used the dough cycle and shaped

the bread by hand and baked in the oven at 375 degrees for about 40

minutes)
