Guest guest Posted September 27, 2006 Report Share Posted September 27, 2006 GREEN BEANS IN TARRAGON CREAM Makes: About 2 cups (4 servings) Source: The New Family Cookbook for People with Diabetes Info: http://diabeticgourmet.com/ INGREDIENTS - 3/4 pound fresh green beans - 2 tablespoons fat-free evaporated milk - 1 tablespoon Dijon mustard with tarragon, OR 1 tbsp Dijon mustard plus 1/2 tsp dried tarragon leaves DIRECTIONS Snap the ends off the beans. Cut the beans in 1-inch lengths. Simmer the green beans in a small amount of water in a covered medium saucepan until crisp-tender, about 6 minutes; drain. Add the milk and mustard to the saucepan; stir together and heat 1 minute. Return the drained beans to the saucepan; toss with the sauce and serve immediately.
