Guest guest Posted August 26, 2006 Report Share Posted August 26, 2006 MELONGENE CASSEROLE Ingredients: 2 large melongenes 4 cups grated cheese 4 tsp. seasoning ½ cup olive oil 2 bunches of Patchoi 6 cloves of garlic, minced 2 large onions 2 tins mushrooms Method: In a large casserole dish which has been greased, place a layer of melongene thinly sliced and unpeeled which has been previously rubbed with a mixture of the oil, garlic, salt and seasoning. Pour over this layer a liberal amount of the mushrooms and cover with grated cheese and onion rings on the top of this, place a layer of Patchoi ( which has been chopped) and cover with remaining slices of melongene. Repeat procedure with remaining mushrooms and cheese. Bake for approximately thirty five minutes at 350° F. Quote Link to comment Share on other sites More sharing options...
